#1 Makki Di Roti and Sarso ka Saag

Sarso ka saag & Makke ki roti The classic Punjabi dish: Sarsoon da saag te makki di roti. Best had with some white butter.This winter special combination of meal makes everyone drool in winters. As a traditional punjabi dish, saag means green and sarso means mustard. Along with a steaming hot makki roti and a dollop of butter or ghee this recipe is a yummy and lip smacking treat in winters. Serve : 4 Prep Time: 15 mins Cook Time: 2 hrs 🔹Ingredients🔹▪️For saag▪️👉 1 bunch mustard leaves / sarson ke patte 👉 1/2 bunch Spinach (optional) 👉 2 clove garlic chopped 👉 1 inch ginger chopped 👉 ¼ onion chopped 👉 2 chilli 👉 ½ tsp salt 👉 1 cup water ▪️For Roti▪️👉 2 tbsp cornmeal / makki ka atta 👉 1/2 cup Wheat Flour (Atta) 👉 1-1/4 cup Water (a little less less that 1-1/4 cup) 👉 Salt to taste 👉 3/4 teaspoon Ajwain/ Carrom seeds 👉 1/4 cup Oil or Ghee 🔹Method🔹👉 Wash and finely chop 1 bunch mustard leaves (sarson ke patte) and ½ bunch spinach (optional) 👉 Put the chopped leaves in pressure cooker along with 2 clove garlic, 1 inch ginger, ¼ onion, 2 chilli and ½ tsp salt. 👉 Add 1 cup water and pressure cook for 4 whistles and mash until coarsely ground 👉 Cook for 5 minutes or until the mixture thickens & keep aside. 👉 In a large kadai, heat 2 tbsp ghee, and saute 2 clove garlic, 1 inch ginger and 1 green chilli. 👉 Saute onion until it turns golden brown. Add in cooked and mashed leaves and mix well. 👉 Let it cook for 4-5 minutes, or until the saag is cooked completely.For Roti 👉 Assemble all the ingredients.Add all the ingredients in a big bowl and knead a soft dough. 👉 Add water slowly and gradually, do not pour at once.Dough is all smooth and ready. 👉 Make small balls out of it and Using your hands, spread the dough ball around making it look like a large disc. 👉 Heat and grease a griddle on medium heat.Transfer it on to hot griddle/ tawa.Cook on each side, until brown and cooked through. Apply oil/ghee as needed. Bathua Paratha Recipe Since it’s the season of bathua leaves,I thought to share bathua paratha recipe.Bathua is warming and thus its good to have during winter.This is a combination of tasty & healthy recipe 😋 Serve : 3 Prep Time: 25 mins Cook Time: 25 mins. . . 🔹Ingredients🔹 👉 4 cups bathua leaves 👉 1/3 cup water for cooking leaves 👉 2 cups whole wheat flour. 👉 1/2 tsp carom seeds 👉 1/2 tsp cumin seeds. 👉 1-2 green chilies chopped. 👉 1 pinch asafoetida. 👉 1/2 tbsp salt 👉 1/2 tbsp oil 👉 oil or ghee for roasting. . .. 🔹Method🔹. 👉 Pluck the bathua leaves from the stem. Rinse them well and boil them till the leaves have softened & wilted. 👉 For Kneading the dough, Take a bowl add whole wheat flour,carom seeds,cumin seeds,asafoetida and salt to it.Mix well . 👉 Strain the leaves from the water and add them to the flour. 👉 Add chopped green chillies & oil to it and knead the dough smooth.Keep it aside for 20 mins. 👉 For making Parathas,make small sized balls.Roll them to 4 to 5 inches circle. 👉 Heat a tawa and Place paratha cook on a medium flame. 🔹Gond ke Laddu (Edible Gum Resin Sweets)🔹. When I was returning from India to the States my mum made these ladoo’s for me. These are absolutely delicious. Rich in iron, protein and calcium, Gond ke laddu provide heat to the body due to the addition of wheat flour (atta), gond and nuts. It is a popular north indian dessert recipe prepared especially during the wet or winter season to provide the necessary heat and warmth. Yields: 20 Prep Time : 15 mins Cook Time : 25 mins. . . 🔹Ingredients🔹 👉 6 tbsp Ghee / Clarified butter 👉 300 gm Whole Wheat Flour. 👉 100 gm Semolina (Rava) 👉 ½ cup (100 gm) Edible Gum Resin (Gond) 👉 2 tbsp chopped Cashew 👉 2 tbsp chopped Almonds 👉 2 tbsp Raisins . 👉 1½ cup (100 gm) dry coconut grated 👉 2 tbsp Fox Nuts (Makhana) . 👉 ¾ cup (100 gm) chopped dry khajur / chuara / dry dates seedless 👉 1 cup (200 gm) Sugar. . . 🔹Method🔹 👉 Fry fox nut in a pan with little ghee & blend them in a blender. 👉 Fry grated coconut in the same pan and keep it aside. 👉 Crush the gond using your hand or with a help of rolling pin. 👉 Add them to the ghee & blend it in a blender properly.
👉 Roast Whole wheat flour in 1 tbsp ghee for about 5-10 min and keep it aside.
👉 Then roast Semolina in the same pan with 1 tbsp ghee.
👉 Transfer all the ingredients in a bowl add sugar to it and mix well.
👉 Shape them into a small sphere/ball shape with greased hand when mixture is still warm 👉 Keep it in a airtight container.
